The sour cherries are never pressed or ground, but they do a double pass on the wine to keep the aromas fresh and obtain two products, one sweet and one dry, which are assembled at the time of going into the bottle not clarified and unfiltered, in small part sour cherry nectar is used to complete the harmony.

  • Collection and production: In the second / third decade of June the sour cherries ripen. Hand-picked without stalks, the sour cherries arrive in the cellar and are selected to eliminate leaf residues. From here a sour cherry syrup is made which ripens during the summer. With the arrival of the red grape harvests in autumn, a new wine is obtained with which to ferment the sour cherries. Then the visciolato is worked and refined until it reaches the bottle.
