Flourless Banana Chocolate Chip Mini Muffins

For 24 mini muffins

Ingredients

  • 350g rolled oats
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 large eggs
  • 2 bananas, cut into small pcs
  • 45g packed brown sugar
  • 3 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 60g mini chocolate chips
  • 24-cup mini muffin tin

Preparation

Preheat oven to 180°C.

Coat a 24-cup mini muffin tin with cooking spray.

Add oats in the blender, blend until finely ground.

Add baking powder, baking soda, salt, blend 2 second to mix together.

Add eggs, banana, brown sugar, canola oil and vanilla extract, blend until smooth.

Stir in the chocolate chips.

Fill the prepared muffin cups.

Bake around 15 to 17 mins, use a toothpick inserted in the center, if come out clean mean the muffin is ripe.

Cool for 5 minutes, enjoy.
